I&#8217;ve found it makes a wonderful pizza topping, with pepperoni, onions and peppers. I&#8217;ll admit it sounds and looks gross, but you have to try it before turning away. Zucchini Cupcakes are fairly easy to make (although a bit too complicated for me), and they are quite filling too.
