It&#8217;s called an &#8220;Opportunity Salad&#8221; because that&#8217;s what is available from the garden. No trips to the store needed, just use what you&#8217;ve got growing. This particular salad contains the following:<\/p>\n<p>Endive<br \/>\nSwiss Chard<br \/>\nLettuce<br \/>\nWhite Onion (Small)<br \/>\nBoston Pickling Cucumber<br \/>\nUnripe Chablis Pepper (Hence the lack of color)<br \/>\nTwo Hard Boiled Eggs<br \/>\nFarmers Cheese<br \/>\nChilli Beans<\/p>\n<div id=\"attachment_684\" style=\"width: 550px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/www.itfarmersblog.com\/wp-content\/uploads\/import\/salad-finished.png\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-684\" class=\"size-full wp-image-684\" title=\"Finished Salad\" src=\"http:\/\/www.itfarmersblog.com\/wp-content\/uploads\/import\/salad-finished.png\" alt=\"Finished Salad\" width=\"540\" height=\"405\" \/><\/a><p id=\"caption-attachment-684\" class=\"wp-caption-text\">Finished Salad<\/p><\/div>\n<p>The idea of this salad is to get as much protein and vitamins as possible.\u00a0 I should note, this was a particularly flavorful salad.
